- 2 tbsp olive oil
- 1 preserved lemon, finely chopped

- 3 tsp salt (adjust to taste, considering preserved lemons are salty)
- 2 tsp black pepper
- 2 tsp ground cumin
- 1 tsp turmeric powder
- 3 strands saffron, gently crushed
- 1 tsp paprika
For the Chicken:
- 1 whole chicken (approximately 3-4 lbs), thoroughly rinsed and patted dry with paper towels
- 2 tbsp olive oil (for searing)

- 1 tbsp olive brine (from the jar of olives, for added depth)
Instructions
- In a small bowl, combine all the finely minced ingredients for the marinade and mix thoroughly until well incorporated. Add 2 tablespoons of olive oil to the now-empty cast iron pan and heat it over medium-high heat on the stovetop. Once the oil is shimmering, carefully place the chicken into the hot pan and sear it on all sides until beautifully browned and crispy, about 3-4 minutes per side. After searing, add the pitted green olives and the olive brine to the pan around the chicken.
- Cover the cast iron pot (if it has an oven-safe lid) or tightly seal it with aluminum foil, then transfer it to the preheated oven. Bake for 1 hour, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C). Once roasted, carefully remove the chicken from the cast iron pan and place it onto a baking sheet. Return it to the oven under the broiler for 5-7 minutes, watching closely, until the skin becomes extra crispy and achieves a beautiful golden-brown color. While the chicken is broiling, place the cast iron pan with the remaining sauce, olives, and brine back on the stovetop over medium heat.
