Despite the enduring memory of that childhood paella, over 15 years passed before I ventured to make it myself. For a long time, the mere thought of preparing paella felt daunting. I harbored a false illusion that it would be overly difficult, incredibly overwhelming, and require an exhaustive list of exotic ingredients and specialized techniques. Many home cooks share this apprehension, viewing paella as a dish best left to professional chefs or the seasoned Spanish abuela.

In reality, the truth is far simpler: paella doesn’t have to be complicated to be absolutely delicious. My approach, while not adhering strictly to every single traditional paella rule, draws profound inspiration from my mom’s cherished Puerto Rican Arroz Con Gandules. This foundation gives it an authentic ‘leg to stand on,’ demonstrating that rich, flavorful rice dishes share a common culinary heritage across cultures. Of course, you can find more elaborate paella recipes featuring a diverse array of seafood like calamari, clams, mussels, shrimp, and even octopus. However, a significant part of simplifying paella for the home kitchen lies in choosing just one or two of your favorite seafood options.

For this recipe, I opted for shrimp and mussels, as they are consistent favorites in my family and offer a wonderful textural and flavor contrast. Once you’ve selected your preferred seafood, it’s time to embark on the exciting cooking process!

Here’s a detailed rundown on how to create this delectable shrimp paella:

Begin by heating a large, heavy-bottomed pan or a traditional paella pan. Add your olive oil and the flavorful chorizo, broken out of its casing. Brown the chorizo over medium heat, stirring and breaking it into smaller pieces with a wooden spoon. This crucial step allows the chorizo to release its rich, spicy oils, which will form the aromatic foundation of your paella. Cook until it develops a beautiful golden-brown crust, typically 3-4 minutes, filling your kitchen with an irresistible aroma.

Next, it’s time to introduce your aromatic vegetables. Diced yellow onions, vibrant bell peppers (green or red for a pop of color and sweetness), and minced garlic are absolutely non-negotiable in this recipe. Carefully nestle the raw mussels directly into the rice mixture, ensuring they are partially submerged to allow them to steam effectively. Cover the pot again and cook for an additional 5 minutes. This final steaming step is truly the “fun part” – it allows the mussels to open up beautifully, infusing the entire dish with their delicate seafood essence and combining all the magnificent flavors into one harmonious paella.

Traditionally, many recipes substitute the chorizo or other meats for chicken. For a truly satisfying vegan alternative, consider using shredded jackfruit. When cooked, jackfruit has a remarkably similar texture to pulled meat, making it an excellent stand-in. Add it at the same stage as you would the chorizo, allowing it to simmer and absorb all the incredible spices and rich flavors from the sofrito base. It will soak up the essence of the dish beautifully, delivering a hearty and flavorful experience.

Similarly, for the shrimp component, a fantastic plant-based substitute can be found in a variety of mushrooms. Hearty cremini mushrooms, oyster mushrooms, or even sliced king oyster mushrooms can offer a delightful umami depth and a pleasing textural bite reminiscent of seafood. Sauté them in a pan with a bit of vegan butter or olive oil, much in the same way we prepared the shrimp. Cook them until they are golden brown and slightly caramelized, ensuring they contribute their earthy richness to the paella. Instructions

  1. In a large cast iron pot, heavy-bottomed Dutch oven, or authentic paella pan, begin by adding the initial tablespoon of olive oil. Introduce the chorizo, removed from its casing, and brown it over medium heat. Utilize a wooden spoon to break the chorizo into smaller, delectable pieces, allowing it to cook for 3-4 minutes until it develops a beautiful golden-brown crust and generously releases its aromatic oils. Next, add the chopped onion and bell pepper to the pan, sautéing them with the chorizo for an additional 4-5 minutes until they begin to soften and become fragrant. Finally, stir in the minced garlic, cooking for just about a minute until fragrant, being careful not to burn it.
  2. Thoroughly rinse the rice under cold water until the water runs clear; this prevents stickiness and ensures a perfect texture. Add the rinsed rice to the chorizo and vegetable mixture, along with the remaining two tablespoons of olive oil, diced tomatoes, hot sauce, and the vibrant spices: smoked paprika, turmeric, and salt. If using, now is the time to add the delicate saffron threads for authentic color and aroma. Mix all ingredients thoroughly for about 1 minute, ensuring that every grain of rice is evenly coated with the rich spices and flavorful oils. Pour in the broth, bringing the mixture to a brisk boil before reducing the heat to a gentle simmer. Cover the pot tightly and allow the rice to cook for precisely 10 minutes, absorbing the savory liquid.
  3. While the rice is simmering, prepare your shrimp. In a separate large pan (ensuring it has a lid for later use), melt half of the butter over medium-high heat. Add the deveined shrimp, tossing them gently to coat. Cook the shrimp for 2-3 minutes on each side, or until they are perfectly cooked through, turning opaque and pink. Transfer the cooked shrimp to a bowl and set aside to prevent overcooking.
  4. Once the rice has completed its initial 10-minute cooking period, gently fold in the frozen peas. Their vibrant green hue will add a beautiful contrast and burst of freshness. Carefully nestle the cleaned mussels into the rice mixture, ensuring they are partially submerged to allow them to steam effectively. Cover the pot again and continue cooking for an additional 5 minutes, or until all the mussels have opened up, signifying they are perfectly cooked and infused with the paella’s flavors. Discard any mussels that remain closed after cooking.
  5. To serve, artfully arrange the reserved cooked shrimp over the top of the fragrant rice. Notes

 When cooking mussels, it’s important to ensure they are tightly sealed before you begin cooking them. After cooking, all mussels should have opened. Any mussels that do not open after cooking should be discarded for safety reasons. 

This recipe is highly versatile; you can absolutely use frozen mussels and/or frozen shrimp. If using frozen seafood, make sure to thaw it completely before following the cooking steps as outlined above to ensure even cooking and optimal texture.
