Discovering Authentic Flavors: The Boriken Inspiration
Growing up in the quiet town of Olympia, Washington, culinary diversity was, to put it mildly, limited. As a girl of half Puerto Rican and half Moroccan heritage, my lunchbox often held mysteries unfamiliar to my predominantly white classmates. The closest we came to “exotic” dining experiences were the local Thai and Mexican restaurants.
I distinctly remember when a Moroccan restaurant opened in Seattle during my high school years; my entire family eagerly made the hour-long drive just to savor a taste of home, a connection to our roots. Similarly, finding genuine Puerto Rican cuisine was a rarity, a culinary quest that often went unfulfilled. It wasn’t until last year, at the age of 26, that my mother and I finally stumbled upon a true gem: Boriken, a Puerto Rican restaurant nestled here in Portland, Oregon. From the moment we walked in, it was clear this place was special. Boriken didn’t just meet our expectations; it transported us. The flavors, the aromas, the atmosphere—it’s the closest one can get to experiencing the vibrant culinary landscape of Puerto Rico or the comforting embrace of my mom’s dinner table, without actually boarding a plane.
If you find yourself in the Portland area, a visit to Boriken is an absolute must to immerse yourself in authentic Caribbean tastes. For those further afield, or simply seeking to recreate a slice of that magic at home, these Puerto Rican Steak Stuffed Avocados offer the perfect culinary journey. They embody the delicious simplicity and robust flavors that make Boriken so extraordinary, providing an easy and delightful sneak peek into their incredible menu.

Tailoring Your Taste: Delicious Filling Variations
While I can’t imagine a scenario where one wouldn’t be “crazy about eating steak for dinner,” the beauty of this dish lies in its incredible versatility. At Boriken, this signature stuffed avocado dish is often served with your choice of savory steak or tender chicken, both of which my husband can enthusiastically confirm are equally delightful. But the customization possibilities don’t end there, allowing you to easily adapt the recipe to suit your dietary preferences or what you have on hand.
If steak and chicken aren’t quite what you’re craving, I’ve successfully experimented with shrimp as a filling, and the results were absolutely fantastic. Quick-cooking shrimp pairs wonderfully with the vibrant flavors of sofrito and peppers, making for a lighter yet equally satisfying meal. For those embracing a plant-based diet, or simply looking to incorporate more vegetables, this recipe is incredibly adaptable. Consider sautéing a hearty mix of mushrooms, thinly sliced eggplant, or even zucchini alongside the onions and bell peppers. These vegetables absorb the rich, aromatic seasonings beautifully, transforming the dish into a delectable vegan or vegetarian option. Imagine tender, seasoned vegetables nestled in a creamy avocado half—pure deliciousness! The key is to ensure your chosen filling is chopped into bite-sized pieces and thoroughly cooked to perfection, soaking up all the incredible Puerto Rican flavors.

Effortless Weeknight Dining: Quick & Healthy
Beyond their incredible taste, these Puerto Rican Steak Stuffed Avocados are designed for convenience, making them an ideal choice for a busy weeknight meal. From start to finish, you can have this satisfying dish on the table in under 30 minutes. The preparation involves minimal chopping and straightforward cooking steps, eliminating any culinary stress.
A key to unlocking the dish’s deep, authentic flavor profile is the inclusion of my Puerto Rican Sofrito. This aromatic blend of peppers, onions, garlic, and herbs is the backbone of countless Caribbean and Latin American dishes, and it infuses the steak and vegetables with an unparalleled richness and vibrancy. If you don’t have homemade sofrito readily available, a good quality store-bought version can still elevate the dish significantly. Not only does it add incredible depth of flavor, but it also boosts the vegetable content, making this meal even more wholesome. If your family enjoys the creamy goodness of avocados, this recipe is an automatic crowd-pleaser that will disappear quickly!
Think of it as a deconstructed, low-carb steak fajita, but instead of tortillas, you get a generous, creamy portion of nutrient-dense avocado. The simple, fresh ingredients ensure that this dish is not only approachable for home cooks of all skill levels but also incredibly friendly for a variety of dietary needs and preferences. It is:
- Gluten-Free: Naturally free of gluten, making it suitable for those with celiac disease or gluten sensitivities.
- Dairy-Free: Contains no dairy products, perfect for lactose intolerance or dairy allergies.
- Paleo: Aligns with paleo dietary principles, focusing on whole, unprocessed foods.

This harmonious blend of ease, health, and sensational flavor makes these Puerto Rican Steak Stuffed Avocados a true kitchen triumph. They’re a testament to how simple ingredients, combined with authentic culinary inspiration, can create an extraordinary dining experience.

Yield: 3–4 servings 1x
Category: Dinner, Steak
Method: Stove Top
Cuisine: Puerto Rican, Caribbean
Ingredients
Scale
- 1 tbsp achiote oil (see note), can be subbed for olive oil
- 1 lb top sirloin steak, cut into bite sized pieces (or your favorite cut of steak)
- 1 large yellow onion, cut into thin strips
- 2 bell peppers, red and orange, cut into small strips
- 1 tbsp sofrito (optional)
- 1/2 cup tomato sauce
- salt and pepper to taste
- 1/4 cup cilantro, freshly chopped
- 2–3 limes, for juice
- 4–6 avocados, ripe, cut in half and rubbed with lime juice to prevent browning
Instructions
- Sauté the Steak and Vegetables: In a large saucepan or skillet, heat your preferred oil (achiote oil for authentic color and flavor, or olive oil) over medium-high heat. Add the bite-sized steak strips to the pan and begin to brown them on all sides, cooking for about 5 minutes to achieve a nice sear. Then, add the thinly sliced yellow onion and bell peppers cut into strips, along with 1 tablespoon of sofrito (if using, highly recommended for depth of flavor). Continue to cook, stirring occasionally, until the vegetables begin to soften and become slightly translucent, another 5-7 minutes.
- Simmer and Season: Pour in the tomato sauce and stir everything together, ensuring the steak and vegetables are well coated. Season generously with salt and pepper to taste. Allow the mixture to simmer gently for a few minutes, letting the flavors meld together beautifully. Taste the mixture and adjust seasoning as needed. If you opted not to use sofrito, you might want to enhance the flavor with a pinch of cayenne pepper for a subtle kick and/or paprika for color and warmth, adding a truly Caribbean essence to your filling.
- Assemble and Serve: Once your steak and veggie filling is cooked to perfection, it’s time to assemble your stuffed avocados. Carefully spoon the hot, flavorful mixture into the hollow of each halved avocado. Finish each serving with a generous squeeze of fresh lime juice, which not only brightens the flavors but also helps prevent the avocado from browning. Garnish with a pinch of freshly minced cilantro for a burst of herbaceous freshness. Serve immediately and enjoy this delightful, vibrant dish!
